Canaris was apparently secretly sympathetic to the Allies by this time and trying to sabotage the Nazis. Canaris was also involved in organizing Operation Pastorius. Could Canaris have played a role in the foiling of Operation Pastorius? If so, what role might he have played? Could he have influenced George Dasch and his confession somehow?

No. All of the Operation Pastorius operatives who didn’t confess were put to death in the electric chair. The Unites States didn’t try a Double-Cross system and was ruthless about enforcement.
I cannot see Canaris compromising an operation just for the operatives to wind up dead anyway.
